Make this banana bread and you’ll have a guilt-free snack for the rest of the week!
- 100 grams spelt flour
- 50 grams oat flour
- 60 grams DeeMuesli
- 50 grams dates
- 3 eggs
- 3 bananas
- 3 tsp baking powder
- 2 tsp gingerbread spice mix
- A pinch of salt
- Vanilla extract to taste
- Coconut oil for greasing the cake tin
Preheat the oven to 180 °C and grease a cake tin with some coconut oil. Add the dates, bananas and vanilla extract to the food processor and mix well. Transfer this mixture to a bowl and add the eggs one by one by mixing them with a whisk. Add the spelt flour, oat flour, and baking powder and mix until well combined. Lastly, fold the muesli into the batter.
Pour the batter in the cake tin and put it in the oven for 40-50 minutes. Once baked, take out of the oven and let cool down. Cut into slices and enjoy!
Tip: For something extra special, slice a banana lengthwise and put it on top of the batter before baking.
